BABY CORN manchurian GRAVY

If  you are a fan of  Indo chinese food definitely you will love this recipe. It will be yummy if u eat with fried rice.

Ingredients:
Baby corn stems
Soy sauce
Corn flour
Ginger
Garlic
Green chilli
Red pepper
Red onion
Salt


METHOD:

Manchurian preparation:
Heat oil for deep frying in a heavy bottomed vessel.In a bowl, combine maida, cornflour, rice flour, salt, water to make a thick paste. Dip the washed and drained baby corns into the batter such that its well coated. Place each piece that is well coated with the batter into the hot oil. Reduce flame and deep fry till the baby corn is almost cooked. Increase the flame towards the end of the cooking process and fry the baby corn till it turns golden brown. keep aside.


Gravy preparation:
 Heat oil in a pan fry the green chilli,ginger,red onion and red bell pepper. To this mixture add little soy sauce,salt and corn powder(to make the gravy thick). Heat while continuously stirring as the gravy thickens. Cook till it reaches the desired consistency and then add the fried Baby Corn. Mix properly and switch off the heat. Garnish with Spring Onion greens and serve hot..

SWEET PANIYARAM (இனிப்பு பணியாரம் )

Ingredients:

Idly batter(grind with fenugreek seeds)
Jaggery or sugar
Cardamom
Coconut (shredded)




Method:

Mix the shredded coconut,sugar and elaichi with idly batter. Mix well. Heat the paniyaram pan. Once it hot enough leave little oil in each impression. Pour a spoonful of batter in each impression after 5 minutes turn into otherside. Remove it from the pan if the both sides become golden brown.

கார பணியாரம் (kara(spicy) paniyaram)

Ingredients:


Idly batter
onion
Mustard
Chopped green chillies
curry leaves
Oil 






 Procedure: Fry the chopped onion,chilli and curry leaves in a pan with spluttered mustard. Add this ingredients into the idly batter with little salt. Mix well and then heat the kuzhi paniyaram pan. Apply a little oil on the pan. Pour the mixture into the paniyaram pan. Close the lid to get even cooking. Shallow deep fry both side. Serve hot with coconut chutney.

SWEET POTATO FRY(சர்க்கரை வள்ளி கிழங்கு வறுவல் )

INGREDIENTS I USED:

Sweet potato - 2
Chilli powder
Turmeric Powder
Garlic and onion (Grind Coarsely)
Salt
Cooking oil

METHOD:

1. Wash and peel the outer skin of the sweet potato. Cut into a shape as you like.
2. In a pan pour a oil to fry the sweet potato
3. Apply a turmeric powder,chilli powder and garlic onion paste.
4. Then fry it in little oil.

HOW TO MAKE VADAKARI

INGREDIENTS I USED:

Channa dal -  1 cup
Onion  -  3
Tomatoes  -  2
Whole red chili -  6
Ginger and garlic paste  -  1 tsp
Turmeric Powder  -  1 tsp
Red chili powder  -  2 tbsp
Curry Leaves  -  8 to 9 springs
Bay leaves  -  2
Cloves  -  3
Cinnamon sticks  -  1 small
Fennel seeds  -  1tsp
Salt  -  required to taste 



Method:
1. Grind the soaked channa dhal  coarsely with fennel seeds and  whole red chilies into a thick coarse paste. 
2.After that add half an onion (chopped) and curry leaves into the coarse paste, make small vadas and fry it in oil. don't fry deeply.
 3.Heat oil in a pan,  add cloves, cinnamon sticks,  bay leaves, chopped onions and saute it for few minutes.
4.After that add ginger & garlic paste and fry them until the raw smell goes off.
5.Now add the chopped tomatoes with  turmeric powder, red chili powder and little salt.
6.Then mix it all together and let it cook for 5 to 10 minutes under closed lid.
7.When its come to a full boil and cooked well, crush the fried vadas with your hands and add it into the gravy.
8. close the lid for 10 minutes.Keep it in simmer. serve hot. Its a nice side dish for idli,dosa and chapathi

NOOKKAL RICE (TURNIP RICE)

Ingredients i used:

Nookal finely shredded - 1/2 cup
Onion sliced
Green chilli
Ginger garlic paste
Brinji leaves
Cinnamon
Coriander leaves

 


METHOD
1. In a pan splutter the brinji leaves,cinnamon,Green chilli and ginger ,garlic paste in a ghee.
2. Add the shredded nookal in the above ingredients
3. Keep it in the flame for 10 minutes till  the raw smell goes off.
4. Add the cooked rice to that mixture. serve hot with potato chips.
